  1. For lauki rabdi:
  2. 1 litre Milk
  3. 1 cup Sugar
  4. 250 gms bottlegourd (grated)
  5. 1 tsp Custard powder
  6. 1 tsp Elaichi powder
  7. 2-3 pinches Green food colour
  8. 2-3 Almonds & pistachios (thinly sliced)
  9. 1 cup Milk powder
  10. For Donuts;
  11. 8-10 pieces Breads
  12. 2 cups Sugar
  13. 1 cup Water
  14. as required Clarified butter- For frying
  15. 1 tsp Elaichi powder
  16. 1/2 cup Pistachios (Powdered)

Steps to make Lauki Rabdi Doughnuts

  1. Take water in a Kadhai and boil. After switching off the flames, put bottle guard in it and leave it for 2 -3 minutes.
  2. Take out bottle guard and rince with water and squeeze all water and keep aside.
  3. In another pan, boil milk. Now, put bottle guard, sugar, elaichi powder in it.
  4. After 2 minutes, put custard powder (dissolved in little milk), green food colour and cook until thick consistency.
  5. Turn off the flames, Cool down a little and mix milk powder lightly. Now rabri is ready and put it in fridge.
  6. For donuts:
  7. Nicely cut 4-5 slices in doughnut shape and 4-5 slices in round shape.
  8. In a pan, put 1 cup water, 2 cups sugar, elaichi powder in it and make 2 strings syrup.
  9. In a kadhai, put clarified butter and fry bread pieces until they become golden and crispy.
  10. Now, put in sugar syrup until they soak all the syrup but make sure not to make your doughnuts soggy.
  11. Final Assembling for Bread Doughnut and Lauki Rabri.
  12. Take round shaped bread and put rabri in the center and pista powder and cover it with doughnut shaped bread, repeat the same process with all the remaining doughnuts.
  13. Decorate your doughnuts with cool Rabri impressively in your own way before you serve it.
